【摘要】:Thisdocumentspecifiesthesafetyandhygienerequirementforthedesignandmanufactureofcookingkettlesequippedwithpoweredstirrerand/ormixertakingaccountofinstallation,operation,cleaning,removalofjammedfood,feeding,maintenanceandchangingthetools.Thecookingkettlesequippedwithpoweredstirrerand/ormixerareusedfromcateringtosmallscale-foodindustrytocook,coolandmixallcoldorhotfood.Theypermitadditionofingredientsduringprocessingwithoutstoppingthemachine.Inthetextthatfollows,theterm"cookingkettles"isusedtorefertotheequipmentcoveredbythisdocument.Thisdocumentcoverscookingkettlesequippedwithpoweredstirrerand/ormixerhavingtechnicalperformanceinaccordancewiththefollowing:-thermalenergysupplycanbeelectricity,gas(seeEN125andEN161),steamorheat-conductingfluid;-capacityofthekettle:from30lto600l(nominalvolume);-maximumpowerrating80kW;-speedofthepoweredstirrer:10rpmto200rpm;-maximumspeedofthemixer:3000rpm.
